Quick Meals: Avocado Chicken Salad Sandwich

I don't know about you guys but eating out for lunch gets expensive. Think about it: you spend on average $5-$10 a day on a lunch that is supposedly a "lunch special." The special may sound good at the time but when you add up all those "lunch specials" that you have on a daily basis, it adds up. 

I'm not going to lie. I've been having a hard time committing to taking lunch with me to avoid spending money on lunch plus using up my gas. I try to budget and stick with only one full tank of gas for two weeks. It's been working, mainly because I usually just walk to a nearby restaurant or make a quick drive down the street. (One of the few perks of working downtown.) But these past two weeks I had to fill up my car twice. That's $50 a tank. That's $100 in two weeks. That is not within my budget plan. It's time to make a change.

I've been looking on Pinterest for ideas for quick lunches that I can pack for work and some have been delicious. I've made the Chicken and Avocado Salad with Lime and Cilantro which is my absolute favorite! My boyfriend hates avocado and cilantro, and he even liked the salad. He's officially a fan of avocado now!  

I recently read on ABpetite's blog that you can substitute avocado for mayonnaise when making a chicken salad wrap. I decided to give it a try when making my usual chicken salad sandwich and I absolutely loved it. I added a pinch of light mayonnaise to help it mix. It was delicious and different. I am definitely give it another try but this time with the tortilla wrap and maybe add a little lime (mix it up a bit, something similar to the Chicken and Avocado Salad with Lime and Cilantro recipe.)

- Avocado
- Celery
- Peas
- Diced Carrots
- Bread

I guess lately I've been really liking meals that include avocado. Weird.
