Insta Lately 004

insta lately with a pinch of jasmine

It's been a while since I've done an Insta Lately post. I personally think I am horrible at remembering to post photos on Instagram. I'll work on it. Meanwhile, here's what I've been up to according to my Instagram photos.

Moving week. I have been helping my boyfriend move into his new apartment these past few days and Winston has been getting really anxious with all the movement happening around the apartment. He's been extra loud, so we thought: let's put him in a box and see what happens. Well, he freaked out. He froze and did not flinch. He was seriously the quietest and calmest I have ever seen him. I think we found our new timeout. A box.

Lush products. How have I not discovered Lush products any sooner? Where has it been all my life? First of all, their customer service is amazing. The girl really took the time to walk me through the products that might be fit for me and tested it out. Second, well. I am just loving the products the more and more I get to use them. I have sensitive skin, so it's been amazing on my skin so far.

Smoke Shack BBQ. My boyfriend and I have been dying to try this new barbecue restaurant ever since we had their seriously amazing breakfast barbecue tacos at a farmer's market last month. Delicious. Our new favorite spot.

Spurs Championship Celebrations. We have been waiting for this day for the past 7 years: an NBA Championship for the San Antonio Spurs. I am so proud to be a Spurs fan. Of course we had to attend all the festivities, including the Spurs victory parade downtown at the Riverwalk. It was hot and gross, but we stuck it out for our Spurs.

Movie night. My sister made me promise her to take her to the movies to see The Fault in Our Stars the weekend it came out, but it was crazy packed so we waited to go to the movies on a Monday night. It is definitely a tearjerker. I will most likely go see it again for a second time around.

Sunday Brunch.  You can't go wrong with Sunday Brunch that includes $2 mimosas. What more is there to say to that? Delicious!

Sunday quote. Speaking of Sunday, my boyfriend and I have really been trying to make the most out of our Sundays by making sure we wake up early for church, run some errands, do a little shopping, try some farmer's market food, etc. It's the best way to kick start the week.

The SAGA installation. I have been wanting to go to this since it first previewed and my goodness, it is beautiful. For more photos, make sure you check out my Finding Beauty in Your Own City post.

Summer Favorites

summer favorites

SWIMWEAR | I like to mix and match my swim tops and bottoms, so when I found these flamingo swim bottoms from aerie through Megan from All That Glitters, I jumped with excitement. How can you not love flamingos? I thought these flamingo bottoms would go perfect with a white swim top that I already have from Victoria's Secret.

SUMMER PERFUME | Flowerbomb is my current go-to perfume for summertime. I love it. I have been dying to get my hands on this for months and thankfully my parents bought it for me for my birthday back in April. I have been waiting for the summer to start wearing it.

SUNGLASSES | I cannot find my Armani Exchange sunglasses that my boyfriend bought me. (Shh! Don't tell him. He'll flip out.) I'm seriously going to freak out if they're really lost forever. Meanwhile, while looking for them, I've been on the search for new sunglasses. Ray Bans! I feel like aviators would be the perfect sunglasses for summer.

SHOES | I love my red TOMS shoes, but I am in serious need of some new ones this summer and these are perfect. I couldn't decide if I wanted TOMS wedges or stick with regular TOMS shoes. I think, for now, these will work. Now, to find my size.

INSULATED TUMBLER | This Kate Spade insulated tumbler is perfect to keep my drink nice and cold when laying out by the pool. I love everything Kate Spade, so of course there had to be at least one Kate Spade item on my summer favorites list.

Finding beauty within your city.

I tend to get bored in my hometown so I'm always anxious to take a trip somewhere to see new things, forgetting that there are a lot of things going on in my city. Yesterday we saw "The Saga" installation at the San Fernando Cathedral and wow! Absolutely stunning. I cannot even begin to describe the beauty we saw last night. It is definitely something worth seeing. It was the perfect way to end a Friday night. No filter or edits needed.

I highly recommend you take the time to find beauty within your city. Try something new. You'll be surprised at what you will find.

If Pinterest Didn't Exist

If Pinterest Didn't Exist

...home decor wouldn't be so difficult. I have pinned home decor ideas for every square inch of my future home. From the kitchen to the guest bathroom to the office room. Let's hope I can make that dream home come to reality.

...a wedding planner wouldn't have to deal with bridezilla. Before Pinterest, planning your dream wedding was based on all the weddings you previously attended. Now it's a competition with all the wedding boards. Thanks to Pinterest, I've changed the color scheme of my future wedding about 10,000 times and I still can't decide between a Spring wedding or a Fall wedding.

...girls wouldn't be expecting a spectacular proposal. I will admit I am guilty of reading all those proposal stories and sending them to my friends. A proposal at a barbecue no longer makes the cut. It's now all about how big the proposal is. (PS: Boyfriend, if you read this, please take note. I don't want it in front of a large crowd. I'm okay with keeping it sweet and thoughtful. K, thanks.)

...I wouldn't know how to cook. This one is more of a positive rather than a negative when it comes to Pinterest. Seriously, I can now feed myself thanks to these super easy Pinterest meal recipes. Have you not seen my avocado ranch pasta salad? Or how about that avocado and egg breakfast toast? I should probably try something that doesn't have avocado to change it up a bit. Maybe I'll try making a grown up mac & cheese now.

...girls wouldn't already be dressing up their imaginary kids with super stylish outfits. But they're so freaking cute! Every time I see a pin of a little girl with a sock bun and sweet shades, I'm like - I can't even, I can't even.

...I wouldn't be changing my hair so often. Ok, I can't blame this one on Pinterest. Having two aunts who are hair stylists is the main reason behind my need to change my hair every other month. But Pinterest now gives me more ideas so every time I see one of my aunts I pretty much have a list of ideas ready. I change my hair, and then one week later, I get on Pinterest and want to change it again.

...I wouldn't have 100 pins of DIY ideas that I will never actually get to. I mean, I wish had the time, energy and patience to get to at least one of those DIY pins. The only "project" I have completed is organizing my closet and my bathroom, which, really that doesn't count as a DIY project. That's more of an "organization tips" board, so that's a fail. Someday.

Despite all these negative (and one positive) reasons for the existence of Pinterest, I still can't stay away from spending hours on it, dreaming about decorating my future home or planning my future wedding. So, you can follow along with me on Pinterest. I'll be there.

So, These Are My Confessions

As I was scrolling through my Bloglovin feed, I noticed several bloggers were posting confessions. So, I figured now would be a good time to jump in on that and list a few confessions of my own.

I was having a good outfit day, so made it a point to take a photo.

I am way too into the NBA Finals right now, probably more than previous years. I think it’s because my heart still hurts for Tim Duncan after last year’s big loss. I’m hoping and praying this year is the year for the Spurs to shine.

I talk to Winston when I take him out for a walk and forget that people might hear me and think I’m crazy. He’s just so easy to talk to, though. He’s a good listener and he actually walks NEXT to me rather than AHEAD of me, pulling at the leash, when I talk to him.

I have no self-control when shopping at either Zara, J. Crew or Sephora. I swipe that debit card as if I have an unlimited amount of money in it. Yeah, that pretty royal blue shirt you see me wearing up there? Zara. But, in my defense, I needed new work attire.

I am secretly watching Marriage Boot Camp: Reality Stars and Mystery Millionaire on WE tv. I refuse to believe Bachelorette couple Trista and Ryan are having marital problems. And Mystery Millionaire is just one of those shows I like to watch for laughs and eye rolls.

I secretly want to win a trip with the Travel Channel’s Trip Flip. Have you seen the trips they go on? They swim with sharks, go zip-lining, ride passenger side in a race car, and more.

I have been a terrible blogger lately. My body has been feeling so exhausted lately. I don’t know if it’s the new medication I’m on that’s making me drowsy and tired, or if it’s just the summer heat that is insisting I lay out by the pool and pass out under the sun. Because I have yet to go to the pool. (Scratch that: I enjoyed the pool in Vegas last month. Just kidding.)

I’m a procrastinator when it comes to buying gifts. Father’s Day is this Sunday and I still have no clue what I’m going to get my dad. It’s hard to live up to last year’s gift: a Spurs basket with Spurs merchandise: 4 Spurs tshirts, Spurs mugs, Spurs license plate holder, Spurs koozie, etc. Any last minute Father’s Day gift ideas?

Avocado Ranch Pasta Salad

Happy Tuesday! It's a late post, I know. But I didn't want to wait until tomorrow to share my little Pinterest creation. Plus, it’s summer which means there’s a little bit more free time to not only enjoy some summer reading but also bring some of those Pinterest cooking pins to life. I’m not going to lie, I tend to just go for ordering to-go instead of cooking but this time I made myself commit to a pasta recipe I found on Pinterest but changed it up a little bit to meet my liking. Here is how I made a avocado ranch pasta salad:

Miracle Whip (fat free)
Ranch Dressing Mix
Red Bell Pepper
Lemon Juice

First, I cooked the pasta in water, drained it and let it cool. Then I cut vegetables and meat that I wanted to mix into the pasta. I eliminated the yellow pepper because I felt like red pepper was good enough for me, but went ahead and added avocado because I just love avocado on everything. For the dressing, I changed it up a bit because I’m just not a fan of Greek yogurt. Instead, I smashed avocado and mixed it with ranch dressing mix and lemon juice to help give it more of a dressing texture. Threw it all in a big bowl and mixed it all up. It was quick and easy, which is perfect for when you get home after work and you’re starving. The last thing you need is to prepare a dinner that is going to take up to an hour to make. This takes like 20-30 mins tops. I made sure I made enough to take some to work for lunch the next day.

Hope you enjoy this recipe! :)
