Avocado Ranch Pasta Salad

Happy Tuesday! It's a late post, I know. But I didn't want to wait until tomorrow to share my little Pinterest creation. Plus, it’s summer which means there’s a little bit more free time to not only enjoy some summer reading but also bring some of those Pinterest cooking pins to life. I’m not going to lie, I tend to just go for ordering to-go instead of cooking but this time I made myself commit to a pasta recipe I found on Pinterest but changed it up a little bit to meet my liking. Here is how I made a avocado ranch pasta salad:

Ingredients:

Pasta
Miracle Whip (fat free)
Ranch Dressing Mix
Carrots
Broccoli
Ham
Red Bell Pepper
Avocado
Lemon Juice

First, I cooked the pasta in water, drained it and let it cool. Then I cut vegetables and meat that I wanted to mix into the pasta. I eliminated the yellow pepper because I felt like red pepper was good enough for me, but went ahead and added avocado because I just love avocado on everything. For the dressing, I changed it up a bit because I’m just not a fan of Greek yogurt. Instead, I smashed avocado and mixed it with ranch dressing mix and lemon juice to help give it more of a dressing texture. Threw it all in a big bowl and mixed it all up. It was quick and easy, which is perfect for when you get home after work and you’re starving. The last thing you need is to prepare a dinner that is going to take up to an hour to make. This takes like 20-30 mins tops. I made sure I made enough to take some to work for lunch the next day.
